I can't finish the game right now, so not sure if NOT doing it will give you the stars, but doing a double pass shows the box being checked in game, but when you check the challenges in the pause menu, it's red. So try not doing it and see if that works.

dont select a pass play at all just select run plays and run the ball and you'll complete it
