What positions can I put a lower overall in and not have to worry about them touching the field?
Definitely all backup o-line.
Probably FB2 and TE3 (and may as well be TE2 for most).
QB2, WR5, CB5, MLB4, DT4. Maybe more.

Only thing to keep in mind when filling depth skill positions is special teams. Kickoff/Kickoff return specifically. I like mid-high 80s, or 90-91 in those slots if I dont already have higher overall depth cards, and I prefer them to be as fast as possible for kick coverage purposes.
Looks like they got you covered except potentially wr3/4 in addition to wr5 also.
You can use the specialists tab to put two WRs as your slot recievers and it doesnt effect the scheme chem, so technically you could have 5 scheme WRs in your lineup but anytime you go 3/4 wide it would use your top 1/2 WRs then whoever you have as your slot recievers. I cracked bnd KJ Duff and hes not spread so i kept him and use him this way.
Also if both your kickers are scheme fits then you will have two more open spots on offense play around with.
