You most certainly CAN change the theme team chem. You also have one built in that you can't change. So if you have one if the teams already you'll get +2 speed right outta the gate. They also have changeable scheme chems! This promo might be cracked y'all!!!
You CAN change the team chemistry. It’s only the special additional team chemistry that can’t be changed - the one in gold (Bama/Texas/FSU). I’ve already changed the chems in my opinion for sweed, jones, Ingram to USC

Seems like the confusion came from stream this morning. Nick (the guy who does the content reveals) said that the team chems cannot be changed. So either 1 of 2 things happened most likely.
1. He either misunderstood what the developers told him about to the theme team and they meant you can't change the baked on team chem to get the boost from the 99 on any player
2. EA decided to add the additional team slot to them before release since all reveals are subject to change before release.
Or there's a 3rd option where we just all misunderstood what was said on stream. That's also a possibility
