I just started playing CUT, and there’s hardly any challenges to grind coins on, compared to when I last played in MUT23. What’re some methods for me to get my stack up?

Just play the auction house. Super easy. Sort by new on the new promotion cards, buy tons of cheap ones as people fire sale and sell them back immediately. I've had days where I've made a million coins mindlessly doing it.
