Can you  one  version on each side of the ball on the same roster? Like Sapp at TE and them one at DT

I don't believe so based on some threads here when it first dropped. I know I tried Proctor at LT and TE and couldn't do it but didn't try one offense and one defense.

No, unfortunately you can not. EA programmed that you can't have them on the same side... but they didn't specify that having one on O and D is fine
