Im fairly new to ultimate team and just started playing last year but the taxing on coins make no sense to me, like where does it go?

It goes nowhere. It's a tax from EA exactly as you said. Taking currency out of circulation makes EA more money. So to sum it up with one word: greed.

They used to offer no tax or half tax weekends. Is that gone for good?
