I currently set at 45/50 for Oklahoma team chemistry. I have 2 players in my lineup that I haven't changed due to what if and underdpgs challenges. So, theoretically, I should be at 48 out of 50 once I put my normal Oklahoma players back in. Is there some trick as to why I can't get to 50? I've gone through my roster(including kickers), and they all have Oklahoma as their team.

Out of position players don't count towards team/scheme.

You are allowed 1 player to play out of position. 2 or more and it wont count towards your 50/50.
To be clear, you CAN play a player out of position and have him count, he just has to be a backup at his ACTUAL position. For instance, I have Zack Martin playing LG, but I also have him as backup LT, so he gets the TT boosts.

As many as you want. As long as they're a backup at their actual position, they will count, but only once per player. So me with Zack, he's counting towards TT at LT, but not LG. So he's taking up two spots, but only one of those spots count for TT.
So just remember that when trying for 50, each player playing out of position costs you a spot that could otherwise count.
