I just got back into CUT and I opened some booster packs and played some challenges to get my team where it is now but im wondeirng if there is anything else I should do?

Get strategy cards for position groups that are a little worse than others and equip those, should help a bit. Also try out Shedeur at QB1 and put the platinum extender or sack breaker ability on him, it seems to be pretty broken and he breaks a ton of sacks could help ya out with some more fun.
