Ive never played MUT and this is my first time really getting into an Ultimate Team with anything EA. When the season is over will they keep releasing content and new cards through the off season or is it pretty much a wrap after the National Championship game?

You can probably expect (somewhat) consistent content until about 1.5 months left of the games cycle, if it's like MUT. So there will be content released until about June and then the last month will be teasers and information release for CUT26.
Madden does the same. Content ends in early July, then the new game comes out in August.

This is if they tailor like MUT. MUT had weekly programs (usually like Tuesday/Thursday), similar to SOTW and Legends, that they continued. You likely won't see any new promos or programs though.
Obviously we don’t know but u would expect as much because they want your money
